Easy Yummy Fat Fighting Dip
4 cups shredded lettuce
½ cup chopped cilantro or basil
3 medium ripe avocados mashed and mixed with
2 tbsp lemon juice
1 ½ cup Greek yogurt mixed with
1 package low-sodium taco seasoning
1 can black beans rinsed and drained
3 medium diced cherry tomatoes
1 small diced sweet onion
2 cans sliced olives drained
8 oz 2% cheddar cheese
Starting with the lettuce on the bottom of a bowl, add each layer on top of the next, ending with sprinkling the cheese on top.
Serve warm by briefly heating in the microwave or under the broiler until the cheese starts to melt. Or simply serve cold.
For dipping alternate one celery stick or cucumber slice with each whole grain baked chip to cut your calories in half.

Grilled Tortilla Pizza with Smoked Salmon and Capers
Package of black bean tortillas
Pesto with olive oil
Smoked salmon, cut into 1/4-inch-wide strips
Capers, rinsed and drained
Shredded sharp cheese
Fresh dill weed
Yellow grape tomatoes cut in quarters
High heat (400° to 500°).
Use lightly oiled baking sheets to make easier
Or brush grill rack with oil (lightly to avoid flare-ups)
Top tortillas evenly with pesto. Add chopped toppings ending with cheese, do not overload. Carefully place tortillas on rack or tray. Watch closely to avoid burning. Grill until bottoms of crusts are lightly browned. Or until cheese melts and crusts edges are golden brown.
These tasty little pizzas cook quickly in the broiler or grill. Serve immediately.
